FAQ

Oolong timing, answered.

How long do you steep oolong tea?+

Gongfu style: a five-second rinse, then 30 seconds for the first infusion, adding 10 to 15 seconds each round (40, 55, 70, 90 seconds, then two minutes). Western style: three to five minutes for the first cup.

What temperature do you brew oolong at?+

About 195°F for lighter, rolled oolongs and a full boil (212°F) for dark, roasted oolongs like Da Hong Pao and the Wuyi rock teas.

How many times can you steep oolong?+

A quality rolled oolong gives six to ten infusions brewed gongfu style, and a Wuyi rock oolong can run twelve. Western-brewed oolong still gives a good second cup.
